Bet you didn’t know I could cook? Well, I can! And it’s the easiest way for me to relax, reflect on the day, and re-energize for the next. Here’s my recipe for Green Garden Salad. It’s packed full of veggies and topped with a spicy-citrusy dressing that’ll make getting your greens in so easy! Check out the process below.
Recipe:
Salad Dressing
- 1/2 cup plain Greek yogurtā£ā£
- 1/2 mayo (I don’t recommend Miracle Whip as a replacement)ā£ā£
- 1 jalapeno, deseededā£ā£
- 1/3 cup chivesā£ā£
- 1/2 garlic cloveā£ā£
- Zest of 1 limeā£ā£
Blend all ingredients together in a blender and store in a sealed jar.ā£ā£
Salad
- 2 large beef tomatoes, wedgedā£ā£
- 1/4 cup shallots, thinly slicedā£ā£
- 1/4 chives, finely choppedā£ā£
- 3 cobs of roasted corn (coat with olive oil and corn seasoning evenly and roast)ā£ā£
- 1 avocado, dicedā£ā£
- Juice of 1 limeā£ā£
Corn Seasoning (combine the following):
- 1 tsp chili powderā£ā£
- 1/2 tsp cayenne pepperā£ā£
- 1/2 tsp smoked paprikaā£
